Today was one of those amazing winter days. The kind that you remember all year as you eagerly wait for winter to come around again. Clear blue skies, a fresh layer of bright white and sparkling powder and frost bitten trees everywhere.
It's been cold of course but that only makes the hot cocoa taste even better :-) Today I decided to make it a little extra warming, turning a kid friendly classic into an all grown up version. I'm using fresh mint as a less holiday-esque way to induce flavor than candy cane. Once January hits, christmas is sooo last year, if you know what I mean. The lime on top is subtle but does a lot to freshen up an otherwise rather sweet drink.
Here's my recipe.
All grown up Hot Cocoa (1 serving)
4 oz white rum
8-12 fresh mint leaves (and a spig for decoration)
3/4 cup milk
2 tsp cacao (the best you can get your hands on)
1.5 tsp sugar
heavy whipped cream to top
Muddle the mint really good with the rum. You want to squeeze all that mint flavor out. Meanwhile, make the cocoa by stirring the milk, cacao and sugar together in a small pot. Take care not to boil it, you just want it slightly warmer than drinking temperature.
Strain the rum into a cup and fill with the hot cocoa. Top with whipped cream and a little grated lime peel. Decorate with a twig of mint if you like!
