When the weather brings inches and inches of snow, there is really only one plan to make for the day. To bake. There are few things that make me feel better about my home than coming in from the cold to a warm kitchen that smells of freshly made cookies. It also helps you win back those calories you burnt from shoveling all that snow :-)
I made these little delights called 'sockerkringlor' yesterday. It's a simple recipe but makes me so happy both to eat and look at! I love them on a plate like this or in a big glass jar.
Here's the recipe should you want to try them for yourself:
150 g butter
4 tbs heavy cream
1.7 cups flour
Sugar (I used Swedish pearl sugar but any sugar will be fine)
Turn your oven to 350F/175C if you have a convection oven. If not you need to go to 400F/200C. Grease or cover two baking sheets with parchment paper.
Mix all the ingredients except the sugar together to a dough. It will be easier if your butter is room temperature. Split the dough into about 30 equal pieces and roll them out to about 7-8 inches. Put on a plate of sugar, pressing down gently to coat. Shape into a 'kringla' on your baking sheet. Bake for about 12 minutes.
