What a week it has been! I have been super busy at work, I mean, I always am but this week has been extra ordinary with projects coming to a close and deadlines approaching way to fast. And as if that wasn't enough we had to take the boys to get a hair cut and get birthday presents for my husband. Since I am traveling today, we decided to celebrate on Saturday, which meant I had to get my gifts ready during the week. If he was the kind of guy that was a little easier to shop for I might have done it earlier but since that's not the case I had been procrastinating and ergo, had to run and do it over lunch on Friday. Also, since I was under the weather last weekend I was itching to get my shelves for my next project ordered and left on Friday night to get that done. So yeah, a partially self inflicted busy week :-)
Before I knew it, Saturday afternoon had come and I had no plan for a birthday dinner! Thankfully, the kids helped the best way possible by playing peacefully and gave me a few minutes to sit down and come up with one :-)
It had to be pretty simple so I turned to some classics. Pepper steak with potato gratin and roasted cherry tomatoes and asparagus for main course, and then I made some super yummy Brie and Pear toasts for entree. The easiest thing ever to make and soo good.
Brie and Pear Toasts
Slices of baguette, top with thin slices of Brie and pear, toss in the oven at about 400 F/200C and toast until the Brie is bubbling and the bread is turning golden on the edges. Top with some fresh rosemary and.....enjoy!
For dessert I had planned on making a Lemon & Lime Meringue Pie but you know what? We simply ran out of time and decided since we had had cake already we would rather wait with the dessert until next week. Something to look forward to is a great thing!
