Last week was one to forget. I came down with some sort of headcold or flu or something and was not even able to get out of bed for a few days. Over the weekend my spirits have slowly been returning. It's been a slow and healing weekend at home with a lot of downtime in the couch and last night I made a few things for myself to make sure this week is more positive! The house is sort of in order and I ironed a white table cloth for the kitchen table - that always makes me feel good. I prepped dinner for tonight and then I made a batch of my favorite oatmeal pancake batter. I am determined to make this week a great one!
If you'd like to give yourself a good start of the day, you should try these - they're super delicious and healthy too. I love when I don't have to make sacrifices on taste to get something that's good for me!
In a medium sized bowl, mix together:
1 cup old fashioned oats
1 cup flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1-2 tbs sugar
In a bowl or container with a lid mix together:
1 cup buttermilk (or kefir)
1 cup yoghurt (use a plain, high protein one)
1/4 cup vegetable oil
Pour the dry ingredients in with the wet and combine. Let stand for a few minutes while your pan or griddle heats up to medium heat. Spoon out 3 or so tbs of the batter for each pancake. When the bubbles on top don't collapse any more it's time to flip the pancake. Only make as many as you're going to eat, then store the rest in the fridge for another day.
Enjoy with your favorite topping - berries, syrup, nuts..whatever your kitchen can manage!
